Since I have to leave work early today, it meant that I had to be to work early as well.  It’s amazing how much of a difference getting moving that extra bit early makes!  I showered last night so it’d be one less thing to worry about this morning (aka so I could sleep a little longer).

Breakfast was an on the go kind of meal.  Spelt toast with cinnamon vanilla sunflower seed butter and cinnamon chips.  Yesterday was the first time I’ve had spelt bread – it’s great and spelt is naturally high in protein, which is always a plus!

Lunch today turned into a huge debacle.  I had planned on walking over to a nearby salad bar to pick something up, but one thing led to another and that just wasn’t going to work.  Next solution?  Delivery from Brick Road Pizza, because they have vegan pizzas.  I called and they aren’t delivering today.  By this point, I didn’t have enough time to go anywhere before my next meeting.  I even tried looking in the vending machines, I was that hungry desperate.

I had started to accept the fact that lunch was just not in the cards for today, but let’s be real.  Missing a meal?  That’s just not going to happen.  Finally, I did my last ditch effort and called Jimmy John’s.

Forgive the recycled photo – I was too hungry to photograph!  I practically tore into the bag before I even got to my desk!

Can you believe it’s been over a month since the last time I had Jimmy John’s?  I know, shocking.  I’d been avoiding it because the company is pretty vague about what is vegan friendly (largely, the bread), and it was easier to just not go.  Confession:  I still got cheese on my sammie.

 Note to self:  restock the food options at my desk for days like this.

Anyhow, I finally got food in my system and I’m a much happier camper now!  Going until after 2 pm without lunch is not good for me!

I’ve got another physical therapy session tonight.  I’m trying to be more diligent about doing all my at home exercises, but it’s easy to forget sometimes!
