trapped in the elevator.

So, my Monday started off getting trapped in the elevator for several minutes!  It wasn’t moving, but when I pushed the open button to get out, the doors wouldn’t open either!  The claustrophobic in me was at the brink of freaking out when it finally started moving!  I was extremely grateful to not be stuck for more than a few minutes, that was enough!

I actually spent most of yesterday completely down for the count; my allergies got the best of me and I had that whole “I got hit by a bus” kind of feeling.

Once I did get up and moving a bit, I made a big pumpkin yogurt mess with vanilla Chobani, canned pumpkin, rolled oats, pecans, a few dark chocolate chips (which were an awesome addiction addition), and some pumpkin pie spice.

Most of the day entailed napping, reading, and catching up on DVR.  ‘Twas a lovely day; minus the whole not feeling well part of it.  I rallied early evening and even dug up enough motivation to get in the kitchen to make some bean enchiladas.

 

  • Preheat the oven to 350 degrees.
  • Pour half a can of enchilada sauce over the bottom of a 9×9″ pan.
  • Divide a can of refried beans (vegetarian in my case) equally between four tortillas; roll and place in the plan.
  • Saute a red pepper and a red onion (both thinly sliced) and spread over the top of the tortillas – the veggies could also be put inside the tortillas before rolling them up.
  • Spread the remaining enchilada sauce and 1 cup Mexican blend cheese over top.
  • Bake for 30 minutes or until cheese is bubbly and lightly brown on the edges.

Easy peasy lemon squeezy.

I ate two and saved the other two for another day.  And, I was in bed with the lights off by 9:30 last night.  That just doesn’t happen.

I was feeling mostly better this morning.  I think another day at home probably would have been beneficial, but my to-do list at work is crazy long this week.  I was writing it out this morning and added a couple things I had actually already done since getting in just to give myself a sense of accomplishment.

I’m weird.

I brought a mix of overnight oats in a jar for breakfast this morning.  Look at all that peanut butter goodness just waiting to get gobbled up.

What a great way to start the day!  Well, minus the aforementioned getting stuck in the elevator part of the morning.  The OOIAJ makes up for it.
