tomato avocado pasta.

Since I didn’t have enough sugar this morning, I had more in the afternoon in the form of ice cream.  A waffle cone of Mackinac Island Peanut Butter Fudge to be exact.

I think I’ve had more sugar today than what is consumed at a sleepover with a slew of teenage girls.  Well, maybe not that much.  But, more than I needed.  It was all really, really good though and I enjoyed every single bite of it.

Since I’m running a 5k in the morning, I knew I wanted lots of carbs pasta for dinner tonight.  Just a bowl of plain ole pasta wasn’t going to cut it though.  I chopped a small tomato, half an avocado, and a clove of garlic to mix in with some corkscrew noodles.  I topped it all with just a hint of olive oil and dusted it with Italian seasoning and pecorino romano cheese.

It was a good combination, but it was missing just a little something but I’m not quite sure what.  Any ideas?

It’s been a really chill night.  I was exhausted after a busy week so I stayed in with a movie.  I’ve got Million Dollar Baby from Netflix right now.  I’m really loving it, except you would never know since I fell asleep halfway through!  Clint Eastwood and Morgan Freeman are both amazing; Morgan is probably one of my favorite actors!  It’s a really great story about the underdog and chasing after your dreams.

I’m off to finish the movie and get ready for tomorrow’s race!  The 2011 racing season is officially beginning!!

That pasta looks divine! I love avocado in my pasta, it gets all warm and melty and mushy. Sounds weird, tastes delish. I love to mash it up in a bowl with chopped basil and garlic. It’s like guacamole meets pesto….and then it meets my mouth. YUM.

No, I totally get it – I loved that it got melty! I’ll have to try that with the basil! Yum!

I’m absolutely drooling over that ice cream right now – and having nostalgic feelings about Mackinaw Island…and fudge…oh fudge.
Good luck tomorrow on the 5k!

It is on my life list to visit Mackinac Island after seeing it on the History Channel and Dirty Jobs! I want to bike around the island.

The sad thing is, I’ve lived in Michigan my whole life and I’ve never been there!
