When I was little, Pepperidge Farm cakes – the ones in the freezer section of the grocery store – were a staple in my home.  It’s been years since I’ve had one!  I had a coupon and they were on sale this week, so after an emotionally charged day on Wednesday, I bought one when I was grocery shopping.  The vanilla even has sprinkles now!  Sprinkles make everything better!

I broke open the  box last night and was happy that the cake was as delicious as I remembered.  I paired it with my second Oberon of the night.

I had every intention of going to bed early last night, but then I made the mistake of picking up Mockingjay (the third book in The Hunger Games series) and got sucked in.  It ended up being close to midnight by the time I finally put the book down.

This morning was just a simple bowl of Kashi GoLean! Crunch with almond milk.  I wanted to make something more but just couldn’t decide.  Or, let’s be honest, find the motivation to actually put something together.

I had closer to 1.5 servings this morning.  I knew that just one wouldn’t be enough!

lunch.

After last night’s burnt bulgar debacle, I honestly didn’t have high hopes for how my bulgar salad was actually going to taste.  Once the bulgar (1 cup dry) was cooked, I added approximately:

  • 1/3 cup red onion, finely chopped
  • 1/2 pint grape tomatoes, halved
  • 1/3 cup feta cheese
  • 1/4 cup pecans, coarsely chopped
  • a drizzle of extra virgin olive oil
  • salt and pepper to taste

Once it was all mixed, I let it cool in the fridge overnight.

I was really happy with how it turned out, despite the cooking fail!  I would definitely make it again!

I’m itching to get out of work and start my weekend!  Only a few hours left!

I love pretty much any cake, although I’ve never had those. Just looking at the sprinkles makes me happy 🙂
Tyler and I are going out of town for some hiking this weekend. I can’t wait – unfortunately we’re still stuck at home waiting for a package to be delivered – so annoying.
