When I got home last night, I was really excited to make some barbecue grilled tofu and parsnip fries.

I turned on the oven to pre-heat, got everything prepped, and half an hour later, the oven wasn’t even to 200 degrees.  Not to mention, the first floor of my house had taken on the somewhat overpowering scent of natural gas.  Needless to say, I scratched my original plans out of fear the house might blow up or something slightly less dramatic.  Our landlord is coming to check things out later this week, so hopefully it’s an easy fix.

Back at square one, I pulled out a Boca burger.  Add some spinach, tomato, pickle, ketchup, and dijon mustard for some kick and it was a good last minute subsitution!

Still, the tofu was supposed to be a part of a few meals throughout the week, so it’ll be back to the drawing board more than once.  Sort of anyhow, since I don’t actually do any legit meal planning.  Maybe I should start that.  Another project for another week.

Breakfast this morning was more than just a simple bowl of cereal.  I started with cinnamon puffins, but added in some of the Cville Cluster Granola from Kath and Matt’s Great Harvest Bread store in Virginia.  I bought it through her recent OpenSky sale, along with some oatmeal and pancake mix, and I am SO glad.  This stuff is ridiculously good!

Topped with fresh strawberries and almond milk makes it even better!

I need to ration that granola, otherwise I just might eat it all in one sitting week.

Without barbecue tofu for lunch (last time I mention it, I promise!), I threw together a makeshift/standard fallback lunch:  an apple and peanut butter sandwich.  I ate this one open-faced to make it last longer and used honey roasted cinnamon peanut butter from Naturally Nutty.

Carrots and hummus on the side, yo!

Back to work, I go!  Powerflex for the first time in WEEKS tonight!

And for what it’s worth, yes, I realize the title for this post was ridiculously over the top.
