the day after the birthday.

So I have to say it.  The day after a birthday?  Not nearly as fun as the actual birthday.  Yesterday was absolutely lovely though, and I’m still feeling all the warm fuzzies from all the kindness the people in my life showed me.  The day of the birthday may be over, but on the bright side, my mom’s side of the family isn’t able to celebrate summer birthdays until October 2 (yep, October), so the fun will still last awhile longer!

I’m trying really hard to get back on track with the eating healthy efforts – I was ridiculously lazy about it over the last couple weeks, the holiday weekend in particular!  It’s easy to get off track and sometimes even harder to get back on.  With my goal to spend less than $28 a week eating out, I really think that will make a difference – I can’t run and grab some pizza or Smashburger so readily, otherwise that’s where all of my money will go every single week if I’m not careful!

So, back on track it is.  The holiday weekend is over, the birthday is a thing of the past, the time for excuses is no more.

Chobani and some Love Grown Foods granola mixed with some blackberries kicked off the day.

I need to stop buying blackberries, they’re getting pricey now that their season is about over!  But, they’re just so tasty I can’t help myself!

For lunch, I had brought in some more of the vegan eggplant “parm” I still had around the house.  In all actuality, the leftover should have gone out with the trash this morning.  Note to self, more than a week is to long to keep this dish around (yes, I realize that is actually the case for most dishes).

So, I started scavenging around what I had at work and discovered that most of what I had here, even the stuff in the freezer, was a bit past it’s prime.   Time to restock the work food stash!

So, I had a peanut butter and honey sandwich; after all, it’s not a week without it!

I think I’m making up for all the lost opportunities from my childhood because I would ever eat peanut butter and jelly sandwiches as a kid!  The bread would get all soggy and I just couldn’t do it!  Even now if I make them at home in the morning, they have to stay in the fridge until I’m ready to eat it to avoid that conundrum!

I did have some of the potatoes from last night to finish off; definitely the high point of my lunch!  I could eat those potatoes from Marie Catrib’s every day of the week and not get sick of them.

Okay, that’s probably not true.  I’m sure I would actually get really sick of them at some point.  I’m convinced it would take awhile though!

Now that I finally got some lunch in mah belly, it’s back to work I go!  Tonight, I’m going to a sneak preview of Brad Pitt’s new movie, Moneyball!
