I really need to use an alarm on the rare occasion I take a nap after work. I just woke up from a 4+ hour nap. That’s a sleep, not a nap! I could barely keep my eyes open all day, so I must have needed it, but we’ll see how well I can sleep tonight!
One of my goals this month is to cut back on how much I eat out. Thanks to budgeting with Mint, I’ve realized that I spend far too much money at restaurants and coffee shops! I overslept this morning and walked out of the house without any food, leaving me scrounging for lunch in my food drawer at my desk. Yes, I have a whole drawer dedicated to food. A girl needs her options you know! I scrounged up a couple options.
A Fiber One bar.
I rarely eat these any more, but I have a few in my desk that I’m trying to eat up. If I’m going to eat something like that, I’d rather go along the lines of Luna or Lara Bar, something with a bit more nutritional value (and no HFCS).
I had a couple spoonfuls of peanut butter.
But, shockingly, that was just not going to be enough. There is a really great salad bar at the hospital’s cancer center which is just up the street from my office, so I trekked up there for some greens and veggies.
Along the way, I posted an Operation Beautiful note.
My salad was a hugely random combination: spinach, green and red onion, chickpeas, banana peppers, green peppers, cherry tomatoes, sunflower seeds, dried cranberries, sprouts, artichoke hearts, and some raspberry vinaigrette. Other than the vegetarian taco salad at my favorite Mexican place in my hometown, I’ve never used banana peppers in a salad before, but I think they could become a new favorite! So good!
Since I slept until about 10, I’m skipping dinner tonight, and the yoga I had planned on. Sadly, I’ve been awake for a little over an hour, and I’m half asleep, so I’m headed back to bed!
What’s your favorite salad topping?
