At work today, we had a taco bar style potluck. Fantastic idea. I vote that we do this every week. Knowing it was going to be a great meal, I intentionally had a small lunch and no morning snack. Cereal, it is! No complaints. It’s not secret I am a cereal fiend.
On to the good stuff…tacos!
I crunched up a couple hard shell tacos to make the base layer for a taco salad instead of regular ole tacos. The summer I worked in California, we had a taco bar for lunch pretty consistently and this was my routine. My salad had a bunch of good stuff like refried beans, guacamole, sautéed pepepers and onions, lettuce, shredded cheese, sour cream, and a bit of a homemade salsa.
There were a ton of desserts too. I sampled several. They were small, so they really only count as one regular sized dessert, right?! 😉 That’s my kind of logic. I had a cake ball, brownie, and a make your own paczek. How impressive is this set up? Directions and all of how to assemble it!
And what better to follow up a trio of sugary goodness than a second helping of guacamole? But, let’s be real. I couldn’t let perfectly good homemade guac go to waste!
I then spent most of the afternoon in a food coma.
In the midst of the food coma, I also had an ongoing I should go for a quick run after work but I really don’t want to but I need to internal debate. Since Wednesdays are generally a rest day since I don’t have a ton of time before I head out to youth group, it took a little extra kick in the butt. So I just reminded myself that I have a 5k on Saturday and a half marathon in less than 6 weeks. Off to the Y I went and had a great run. I swear, it’s the days I really don’t want to go that turn out to be the best! I did 3 miles in 30:48 (10:16 pace).
Dinner was a highly nutritious, well balanced meal. Or, it was Starbucks. I was still so full from lunch and all I reallywanted was caffeine. So I did what any reasonable person would do. I got a soy caramel macchiato. I said I was going to try to stop counting coffee drinks as my breakfast, I never said anything about lunch or dinner. 😉
