in Vegan Month Challenge

It was one of those mornings where I would have loved to stay curled up in bed with movies and a good book all day.  It’s super dreary and overcast here in Grand Rapids, a stark change from the sun and blue skies we’ve had for the past week!  But alas, the office beckoned and I got myself moving.  It’s SO nice to have things back to a normal pace at work again!

Breakfast was the exact same toast and sunflower seed butter combination I had yesterday.  It’s so quick, easy, and filling that it’s definitely become my favorite way to start the day (other than my coffee, of course!).  The type of bread might change, but the deliciousness remains!

A couple nights ago, I roasted some redskin potatoes I had gotten at the Farmer’s Market.  I seasoned them with salt, pepper, and an Italian seasoning.  So simple and tasty!

I brought half the batch in for lunch today.  I’m not quite sure why, but they didn’t do so well in the microwave.  I tried warming them up and after only 15 or so seconds, they started smelling like they were burning.  After a couple attempts, I finally gave up and ate them lukewarm.

I also had one of the Calnaturale Svelte drinks that I won from Julia in a giveaway a few months back.  They’ve been sitting around this whole time and I wanted to drink them up!  Since they’re made with soy milk, they’re okay for the Vegan Month Challenge!

I tried the french vanilla flavor first (there’s also chocolate, spiced chai, and cappuccino).

I’ve only had about half and I’m still not sure what I think.  It’s got some pretty solid nutritional stats (the whole container is only 260 calories), plus lots of vitamins and minerals), but I’m not super thrilled with the flavor.  French vanilla isn’t always my favorite thing though, so that is likely a large part of my deal.  Plus, let’s be real, it’s perhaps not the best thing to pair with potatoes.

The verdict is still out on this one, but so far I’m excited to try the other flavors and see how they stack up!

What’s your favorite flavor for a drink?  I love anything caramel, especially when it comes to my coffee drinks!

I tried one of those and could not stomach it… I think the Java one? I ended up throwing it out after one sip! I have 2 more in the fridge but am scared to try them… but maybe the chocolate won’t be so bad? Please? 🙂

Yeah, I’m hoping the others will be better…but protein/meal replacement drinks like that are never my favorite thing anyhow.
