First off, Happy Canada Day to all my friends to the north!

And so it begins, the Vegan Month Challenge.  It’s going to be so hard, but I really want to try my best and do well with this challenge.  If it goes well, who knows, maybe it will become a more long term thing.  But, one day at a time.

Breakfast was a bowl of Puffins cereal with some chia seeds and blackberries!  I love that berries are in season!  Yum!

It was a short and sweet day at work – since I got so many hours in early on in the week, I was done by noon!  The beauty of being an hourly employee, I get my forty hours in and I’m outta there!

I swung by the farmer’s market on my way home.  It’s the first time I’ve gone since they opened for the season two months ago!   I didn’t get a ton, knowing I was heading out for the holiday weekend, but grabbed some Michigan strawberries, red potatoes, and a loaf of bread from Great Harvest!

The nice thing about being home at lunchtime is the chance to make a meal I normally wouldn’t get that time of day.  I made a stuffed acorn squash; I roasted the squash and then added a mixture of couscous, pecans, and Craisins to each half.

The one thing I would have done different next time would be scrape out the squash before adding the stuffing.  I ended up dumping it all out, scraping out the “meat”, and mixing it all together.

It felt a little like fall, but so wonderful!  After lunch, it was time to hit the road.  I’m spending some time with my sister and her family this weekend.  Mom and Grandma came down, too!  Oh, and the Navy Blue Angels came by to say hello!

They were flying all around!  It was really cool to watch!

Good luck with the vegan thing! I could NEVER do that! I don’t even think I could go a month without meat, let alone dairy too!

You can do it, Mindy! Think of being vegan as an exercise in willpower! And deliciousness. When I went vegan, I found it really made me experiment in the kitchen, which was a good thing for my budget, my waistline, and my cooking confidence. And also, in the words of Mama Pea, no one died. 🙂 Good luck!

Being vegan isn’t hard once you figure out what you can eat, Minders! I was really hungry for the first week or so but Marie Catrib’s saved me until I started cooking. You CAN do it and it’s an important thing to do. Have you seen Food, Inc. or anything else about factory farming? Just think of those animals when you want dairy or eggs AND have some delicious vegan ice cream, fruit, etc. available. I make my own ice cream with coconut milk and it’s better than anything at Dairy Queen! I’m so proud of you and I know you will do well.

Thanks Michelle – I think already being vegetarian does help, but it’s definitely a tough transition. I saw Food Inc awhile back – it was actually the big contributing factor to going vegetarian, but it might help to watch it again! Starting over the holiday weekend was tough, but I know if I can get through that, I can get through anything!

Also…if any of your delicious vegan treats ever find their way over to my desk, I wouldn’t complain! 😉
