starting the 101.

I’ve seen the 101 in 1001 lists on a few other blogs and I kept thinking I should do one of those, it sounds fun.  So, I did.  Basically, you write up a list of 101 things you want to do over the course of 1001 days (about 2.75 years).  Thinking of that many things was harder than I anticipated!  I may have borrowed ideas from a few other people, so thanks to those people!

My 1001 days starts today and I’m really excited to start checking things off the list!  It will actually end just a little over a month after my 30th birthday, so I think it’s a good timeline!

breakfast.

It was another bagel this morning.  As one of my coworkers pointed out after reading the blog last night, it’s my fourth bagel this week.  Truth.  Hi, my name is Mindy and I’m addicted to bagels.

lunch.

Apparently, repeat meals is the theme for the week.  It was enchiladas again for lunch.  Fortunately, they are so delicious, so I can’t complain.

This is the problem about grocery shopping and cooking for one, sometimes.  I buy a pack of bagels, I have a pack of bagels to eat.  I make a dish of enchiladas, I have a dish of enchiladas to eat.

What I really need to is be more intentional about freezing food rather than eating it all before it goes bad.  That way I don’t end up eating four bagels over the span of a week.  Variety is the spice of life.  Apparently I have no spice.  Except for the enchiladas because they have a definite kick to them.

Do you get in food ruts and eat the same thing over and over? Clearly I do since this is the second time this week I’ve written about it.  Time to break out the cookbooks, my friends!

I know what you mean! I tend to get into a rut with food as well. Its so easy to just make a big batch, then mow down on it over the course of the week… or weekend. But I also kind of do it on purpose because I’m working and going to school full time and if I want a home cooked meal, then I need to plan it in advance otherwise I won’t have time to cook and study!

It’s a strawberry daiquiri mix to add to plain cream cheese. I found it at a craft show. It’s SO good.
