start the week off right.

The best way to start a Monday?  Particularly a Monday where I have to be into work a bit earlier than normal?

By far, overnight oats in a jar!  It is definitely a way to start the week out right!

My jar contained 1/2 cup rolled oats, 1 cup almond milk, 2 tbsp each chia seeds and cacao nibs, and 1 tbsp dark chocolate cocoa powder; and of course, the remains of the sunflower seed butter!  I topped it off this morning with blackberries.

This time last year, my boss cooked a Greek mealfor my department; today, she did the same thing for us!  I was a bit limited on what I could eat, but she was very accommodating in making some food vegan for me.  She had made some Greek salad without feta, but forgot it at home.  Sadface.  I had a second serving of potatoes to make up for it!

The dessert was fresh fruit and halva, made of ground sesame seeds and a sweetener.

I wasn’t completely sold on the halva, but I’m glad I tried it!  It was just not what I was expecting – almost too sweet for what I was expecting.

I had my first actual physical therapy session this week, after last week’s initial evaluation.  I think it’s going to be challenging, but really, really helpful!  I think I’m going to skip up my usual Monday workout of Zumba for a couple weeks and stick with the stationary bike.  While I love Zumba so, so much, I feel like it’s doing more harm than good with the jumping and twisting.

After 8.0 miles last week, I was determined to up it this time around.  I planned on just adding one more, but actually made it to 10.0 miles in 43:22 and added in a 0.5 mile run.  In keeping with my push-up and ab challenges, I did 26 and 150, respectively.  The last couple push-ups were TOUGH, but I pulled it out!
