I attempted a speed run today.

It kicked my booty.  I held my own for the first 15 minutes, but after that, things felt considerably more challenging.  At one point near the very end, I held at a 7:30 pace!  Granted it was for less than a minute, but nonetheless, that’s a speed I never, ever, ever thought I’d be able to do at all.  Progress, just a little bit at a time!  I have a whole new respect for runners that can consistently hold that pace for miles upon miles!

Ultimately, I finished up my 3.0 miles in 33:20 (11:06 pace), and cooled down with walking another 0.4 miles to hit a 40 minute total.

I wrapped up my time with a LOT of stretching and a little core work (planks and bicycle crunches).  Three days of solid workouts in a row?  I’m feeling pretty fantastic!

I came up with my dinner creation while I was running.  I wasn’t sure how it would turn out, but I was really pleased!

Salsa Verde Roasted Vegetables and Rice

serves 2-3

  • 1 cup brown rice
  • 1 pound Brussels sprouts
  • 1 red pepper
  • 2 tomatoes
  • 4 cloves garlic
  • 1/2 cup (or to taste) salsa verde (I used Trader Joe’s brand)
  • 1 lime
  • 2 tbsp extra virgin olive oil
  • salt and pepper

Pre-heat the oven to 375.  While it’s warming up, prep the Brussels sprouts (check out Anne’s helpful post on this!), coating with olive oil and just a bit of salt and pepper.

Roast the Brussels sprouts for 20 minutes; while they’re in the oven, slice up the red pepper, tomatoes, and garlic.  Also, halve the lime.

After the sprouts have been in the oven for the first 20 minutes, add the rest of the veg, and season it all with the juice of half the lime.  Put that all back in the oven for another 25 minutes.

Once that goes back in the oven, cook the rice.  Once that is just about done, add the juice from the second half of the lime.

After the rice and veg are done, add the salsa and enjoy!
