Tonight was the February edition of dinner club and it was my turn to pick! Since I had a Groupon to use up, we headed to a place called Rush Creek Bistro which is associated with one of the area country clubs. I called earlier in the week to make reservations and was pleased with the place before I even walked through the door. I talked to whomever it was that answered, explained that I’m vegan (just flat out was easier than trying to explain the Vegan for a Week challenge!) and asked if the chef would be able to accommodate that. She said that wouldn’t be a problem.
I started out with some uh-mazing bread when I sat down. The top was seasoned with some peppery mix that added a little something extra tasty! I think I had about three times this much over the course of the night.
I also had a razzmatini. Well, two technically. One before dinner and another as we were finishing up the meal.
My “special” meal was fabulous! The chef made a roasted eggplant on a bed of veggies. It was something so simple, yet definitely something I would never make on my own. And if I did, the presentation certainly wouldn’t have been so lovely!
While I was at dinner, my friend Ashley called to ask if I wanted to go see Just Go With It later in the evening. I’m a big fan of both Adam Sandler and Jennifer Aniston, and I’ve been waiting for this to come out for ages! I, of course, said yes and I am so glad I did! It will definitely become one of my new favorite movies! A few of the jokes were a bit crude, but I think that’s somewhat to be expected in an Adam Sandler movie. Ultimately, lots of laughs, a cute story, charming kids. Go see it!!
