The best way of life is to be, simply be.

Good reminder, huh?  I love the litte quotes on Yogi Tea.

I threw together some overnight oats last night and (gasp!) used the last of my chia seeds!  I must go buy more ASAP!  I added half a scoop of protein powder so it’d stick with me awhile longer.

The protein powder make the oats extra thick – my favorite!

Yesterday, I brought lunch to work and I was obviously not thinking clearly because some mixed greens and an apple does not make for a sufficient lunch.  I grabbed Qdoba instead.  I had yesterday’s lunch along with the addition of some pasta for today.  It was much more filling!

I had come up with a great treadmill interval workout for tonight, but those closer I got to leaving work, the more I wanted to get outside and enjoy the unseasonably warm temperatures.  So, I pushed the treadmill aside for another day.

I may have overestimated the temperatures, particularly considering the sun was starting to set as I got started.  I was underdressed and got really cold, really fast!  By the time I got home I was simultaneously sweating and shaking – such a weird feeling!  It’s two hours later and I’m still cold!  It was a tough run that was true reminder I need to make outdoor runs a more consistent thing!  2.5 miles in 28:23.

Getting back into a truly consistent workout routine is a killer.  In all of December, I worked out 13 days total.  Ten days into January and I’ve only gone two days without getting something in!  The thing is, though, I feel such a positive difference!  It might be all in my head, but even thinking there’s change for the better keeps me motivated to keep working my ass off.  The negative?  My legs are in a constant state of a dull ache right now!  I’m so thankful tomorrow is a rest day.

Yesterday, Jenna posted about Tony Chachere’s creole seasoning and I was inspired to dig mine out of the pantry!  I haven’t used this stuff in ages!  Obviously, I wasn’t going to recreate her chicken dish; instead, I got creative with what I had on hand!

I scrambled up a container of tofu that I seasoned with Tony’s while it browned.  A can of (drained and rinsed) black beans and a can of diced tomatoes went in the mix.

A new Biggest Loser tonight!  Let’s be honest though, I’m just killing time until new episodes of Glee come back next week.  Then, BL gets banished to the DVR!

I never thought to scramble up tofu! That sounds and looks so good. Might just have to be my lunch tomorrow.

I have to catch up on BL from last night. It’s on the DVR waiting for me.
