regaining normalcy.

Hi.

First, thanks for all your kind and supportive words over the last little bit.  I appreciate it more than I could ever express, so consider this the BIG HUG that I would give you.  You know, if you were here next to me, not reading this all on a screen.  Things are still feeling a bit overwhelming and stressful, but starting to settle back down into a comfortable rhythm.  I’m still feeling exhausted and drained pretty consistently, but things are looking up overall.  My knee still hurts pretty much all the time as of late.  By the end of the day, I can almost always feel it just when I’m sitting on the couch or lying in bed.  I’m getting antsy for results from the MRI, but trying to be patient as I wait.

Today was the first day all week I didn’t have to be at work early.  It was lovely!  On my way out the door, I had a Bagel Thin with sunflower seed butter and white chocolate chips.

Like this old photo, but imagine a bagel instead of the English muffin because I was brilliant and left my camera at work last night. 😉 Thankfully it was still right where I left it this morning!

At work yesterday, we had a pasta bar.  There were tons of leftovers, so I made an extra bowl for today’s lunch!  Alfredo sauce?  Love.  In all honesty, though, it’s actually a food that I only really started to enjoy over the past year or two.

I’ve been guilty this week of getting in all the eggs and dairy I can before the Vegan Month Challenge starts tomorrow.  I’m not sure if that goes against the purpose, but it is in large part just to eat up things that are in my fridge already.  I just hate throwing away food if I don’t really need to!

For the Vegan Month, I’m making it not just about cutting out the animal by-products, but also cutting back on processed and packaged foods.  This includes my beloved Diet Coke and all my fancy pants coffee drinks.  It’s a lot to take on all in one month, but I’m really excited to see how my body changes as a result.

It’ll be hard.  I have not the greatest willpower.  I didn’t even survive the Vegan for a Week challenge that Morgan hosted earlier this year.  But, unlike that challenge which was all virtual, one of my roommates is also taking on the vegan month challenge.  I hope that having someone I saw almost every day join me will help make it easier to stick with.

As long as I’m taking on a challenge food wise, how about a fitness one too?  Because why not?!
