pumpkin french toast.

I had a fantastic breakfast creation this morning:  pumpkin French toast!  It was delish!

I made it pretty much just as you would make regular French toast, but added pumpkin to the batter.

serves one.

  • 1 egg
  • 1/4 cup milk (I used almond)
  • 1/4 cup canned pumpkin
  • 1 tbsp vanilla extract
  • pumpkin pie spice

Bake it over pretty low heat because the thicker batter makes it take a bit longer to cook.

I sprinkled the cooked slices with white chocolate chips and an extra dash of pumpkin pie spice.  There was enough flavor and sweetness that I didn’t need anything like syrup, especially once the chips got really melty.

Definitely a winner!

The rest of the morning was doing a couple errands and trying to get rid of some nasty sinus congestion/pain.  My friend Heidi got married this afternoon, so that was my day in a nutshell – busy, but fun!!  I’ll have more on the wedding and reception tomorrow, but for now, I’m going to go pop in a movie!

Ahhh I found an easy french toast recipe! Thank you! I’ve never incorporated pumpkin into my french toast but I am definitely willing to test it out. My favorite pie is pumpkin pie, so this should work out great!
