pm is not am.

A few weeks back, I made an epic grilled cheese sandwich.  I tried to make something similar last night with pumpkin butter instead of pumpkin cheeze.  It was a decent combination, but not nearly the same.  Perhaps if I had used a bit less pumpkin butter?  That flavor was quite overpowering.

I had some applesauce (one of my very last Healthy Living Summit swag bag items!  Yes, I still have things left over!) with granola on the side.

This morning, I had a 7:00 am meeting at work – boohiss!  I set my alarm early (or so I thought).  When you need to get up extra early, double check your alarm is set for AM not PM.

Fortunately, I woke up on my own just before 6:00 am and still made it to work.  It helped I had made some overnight oats in a jar (yum!) last night.  My mix had 1/2 cup rolled oats, 1/2 cup vanilla soy milk, 3/4 cup vanilla Chobani, 1 tablespoon each of chia seeds and cacao nibs, and a teaspoon of dark chocolate cocoa powder.

 

It’s already one of my favorite breakfasts, but in a Nutella jar?  Heavenly.

Let’s see, what else?  Lunch was the rest of the quinoa mix I made Tuesday night, minus the feta this time around.  Not because the feta wasn’t delicious (feta makes it betta!), but I forgot.  Oops.

It was a dish even better served cold.  Much like revenge.

Since I had to work early, I got to leave early – so I left half an hour early today and I’m doing the same tomorrow.  Sacrifices have rewards.  My plan was to head straight to the gym, but I totally forgot my workout clothes at home…so home, then back downtown.

I ran 2.0 miles in walk/run intervals (0.1 mile at 4.0 mph, 0.4 mile at 5.7 mph; times four); it took me just shy of 23 minutes.  One day, I’ll get my speed and distance back up.   😕  I finished up with Zumba and it totally made up for the lack of a workout that Monday’s class gave me!

Gotta jet!  I’m watching Big Bang Theory – I love those nerdy guys!
