Happy Monday, lovelies!  It’s a chilly, dreary day here in Grand Rapids, but it’s better than snow, so I’ll take it!  Spring is slowly trying to make it’s way here – it’s supposed to be high 50s/low 60s by the end of the week which makes me inexplicably happy!  😀

breakfast.

I prepped some overnight oats while I was getting dinner ready.  My bowl contained:

  • 1 cup almond milk
  • 1/3 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp cacao nibs
  • 1 tbsp-ish peanut butter
  • a sprinkle of pecans

The cup of almond milk was a bit too much, so the mix was a bit more liquidy than I would have liked, but otherwise it was a great start to the workweek!

When I was perusing my Google Reader this morning, I came across this gem from Marc and Angel Hack Life: 10 Commandments for a Good Life.  It felt like just the right thing to read on a Monday morning.  I really liked the whole thing,but a couple that really stuck out to me were:  I cannot, and will not try, to please everyone; I can only be me; and life never gets any better, only my perception of it does.  The last one really struck me.  If I want to find the negative in life, I will.  But, if I want to find the beauty and the grace and the joy, I will.

lunch.

I brought another bowl of the bulgar salad to work for lunch.  I’ve got about 1 serving left after this.  The onion taste has definitely sunk in because it’s pretty strong at this point, but overall still good.  I’m still trying to figure out what else would be a good addition to the mix, but I just can’t put my finger on it.  Any ideas?

An hour or so later, I had some apple slices with peanut butter.

I’m heading back to the gym tonight for my first workout since hurting my knee during the National Half Marathon!  I’m doing some strength training and Zumba – I haven’t Zumba-ed since the middle of February and I’m excited to get back!  Here’s to hoping my knee holds up!  If it does, I’m attempting a run tomorrow!  🙂
