I have heard so many people talk about the awesomeness (not a real word, I know!) of Greek yogurt, particularly Chobani. When I was grocery shopping Monday, I bought a container of it just to try it out.
Awesome is right. I had mine (vanilla) for lunch, mixed with 1/2 cup oats and some raspberries. Delicious! I had some Pecan Crunch on the side.
If you like pecans, you must try this recipe. My sister gave it to me and it’s addicting.
2 T. unsalted butter
1 T. sugar
1/2 tsp. salt
1/4 tsp. cayenne pepper
2/3 cup pecans, chopped
fresh ground black pepper to taste
In a small saute pan, heat the butter, sugar, salt, cayenne pepper and pepper over medium heat. Add the pecans and continue to saute, stirring constantly until sugar has begun to carmelize, about 4-5 minutes, being careful not to burn the nuts. Place the mixture in a paper bag, shaking occasionally as it cools. Nuts can be stored up to one month in a cool, dry place.
I didn’t have cayenne pepper, so I substituted chili powder and I added just a bit of cinnamon. So, so good!
Work was rough today, but I had a surprise birthday celebration to look forward! My friend Andrea’s birthday was Tuesday but she couldn’t do anything that night, so our friend Jacqueline and I surprised her! It was a great success! We ended up going for dinner at a local Indian restaurant, Bombay Cuisine.
We shared an order of aaloo tikki (it tastes so much better than it looks, I promise!) and I had something that I cannot for the life of me remember what it is called but it had garbanzo beans and some veggies in a sauce. It came with rice and naan (yum!). I ate all the naan, but about 1/2 of the rest.
I was really hoping to get a run in, but it was like 8:45 by the time I finally got home for the day! I am exhausted, but it was completely worth it for a great birthday surprise and quality time with quality friends. Nights like this are completely, 100% worth sacrificing time at the gym for.
