Me and the alarm clock are not getting along this week. Well, it’s probably more along the lines of I can’t seem to work an alarm clock, but I’ll feign innocence at this point. It can’t defend itself. Yesterday, it was set for 8 am (unbeknown to me until yesterday morning!). Last night, I reset it for what I thought was 6:20 am. Nope, pm. Hopefully tomorrow will go according to plan!
I threw together vegan overnight oats last night with 1/3 cup oats, 3/4 almond milk, and 1 tbsp chia seeds. It normally uses 2, but I was running low so cut that in half. It didn’t thicken up as much as normal, but still tasty! I added some agave nectar, cinnamon chips, and a few pecans this morning.
My co-workers and I had a staff outing around the lunch hour. One of our company’s partners just did a multi-million dollar expansion, so we toured the new part of the building. Knowing it would be a late lunch, I munched on some grapes and strawberries before we headed out.
I was SO glad I ate something because the boxed lunches they gave us weren’t at all vegan (not even vegetarian, really) friendly. Ham or turkey with cheese on overly processed bread and some sad looking lettuce. A pasta salad with bacon. The fruit I could have eaten.
Fortunately, we were just down the road from Marie Catrib’s, one of my absolute favorite restaurants in town! I called in a to-go order and we picked it up on the way back to the office. Best decision of the day! I had my usual order: a sweet potato and quinoa burger with a side of seasoned potatoes.
They give you so much food I’ve got the second half for tomorrow’s lunch! Score!
Big plans for tonight…hopefully squeezing in a quick run after work. My shin has been aching today, so we’ll see how it goes. I don’t want to make anything worse! Later on is trivia night with some great people! Can’t wait!
