love a good challenge.

West Michgan is slowly digging its way out from the blizzard!  The plow came can cleared the driveway around 1 this afternoon, then it was just a matter of digging out around my car.  It’s never a good sign when you use a shovel to get all the snow off!  I definitely had it better than people who park on the street or have to clear the driveway themselves, though, so I really can’t complain at all!

The dogs had fun playing out in the snow and got the snow/ice balls all over their fur to prove it!  I tried picking them off, but it was just not happening!  They seemed pretty content to take care of it themselves!

After this morning’s whole locking myself out of the house debacle, I was ready for some food!  A year or so ago, I was on a big kick of eating egg and cheese sandwiches.  I had a random craving for one this week, so I went with it!

challenges.

I’m a fan of a good challenge (hence, I registered for a marathon!) and I’ve signed up to participate in a couple within the blogworld lately.

First, is Jenna’s That Weight Loss Challenge (think Biggest Loser kind of competition) that runs until August 31.  I really don’t have high expectations to win, but I thought it’d give me a bit of extra incentive to work towards my goal weight.

As part of the challenge, we had to submit “before” style shots from three angles:  front, side, and back.

After the challenge ends, I’ll be sure to update y’all with my “after” pictures!

The second challenge I signed up for is Morgan’s Vegan for a Week starting on Monday, February 7th and ending Sunday, February 13.  I think it will be a tough challenge, but I (think) I’m up for it.  Since I’m already vegetarian, that is one step closer.  I try to be conscious about not eating a ton of other animal products like eggs and cheese, but I think it will be tough to completely cut them out for a week!

I regularly consider Wednesday to be my rest day on my workout calendar, but since I didn’t have work or my youth group, I wanted to take advantage of the extra time.  I headed over to the Funky Buddha for a sweaty session of hot yoga!  I have not been as regular about my practice as a I should be lately.  It felt awesome to get some good stretching in!!

dinner.

I am slowly starting to dwindle down on the food I brought to house-sit.  I may need to make one more grocery store trip to tide me over until I’m done on Sunday!

In the mean time…random meal combinations!  My favorite!  Tonight’s mix was some couscous!  By far one of my favorite grains!

I paired it with some cucumber and hummus.

For everyone else who got lots of snow in the past 24 hours, I hope you stayed safe!  For those that didn’t, know I’m highly envious!

Are you a fan of snow? I am definitely NOT!  (Yet, I continue to live in Michigan…go figure…)

I’m definitely NOT a fan of snow or ice either. I think it’s pretty, but think it shouldn’t exist more then 2 weeks past Christmas! Cucumbers and cottage cheese (and Cucumbers and hummus) are my favorite after dinner snacks. Healthy and not too heavy!

I think it will be tough too . . . for me it’s going to be the cheese, no wait it’s going to be all of it I think hahaha
