it’s like a monday. but it’s not actually monday.

This day off in the middle of the week thing?  I could definitely get used to it!  It’s wonderful that it’s actually Thursday but feels a bit like a Monday.

I had a late evening snack last night:  a couple banana bread muffins with some sunflower seed butter.  I’ll be sad when these are gone, they’re so good!


It’s been quite the adventure this round of house/dog sitting.  Since Saturday morning, I’ve had one dog throw up, the security system alarm going off, locked myself out of the house, and this morning I got out of the shower to hear the dogs howling incessantly.  I quick got dressed and headed down to find out what the commotion was.  It was the Orkin people at 7 am! Apparently, they come check the house every couple months, but I was definitely not expecting an early morning visitor!

Since that cut into my getting ready time, I had to fly through my morning routine and brought breakfast to go.  I finally finished off the strawberry daiquiri cream cheese!  It was great while it lasted, but I’m not sad to see it gone!

This day is absolutely flying by!!!  I keep losing track of time and I’m shocked when I look at the clock!


It was well after 1 pm by the time I finally got around to lunch!  I had some leftover couscous (is it weird that I prefer it cold?  I think it tastes so much better!) and a single serving container of Green Giant cheesy broccoli.

I also managed to dig up a container of pomegranate Chiobani that I forgot I had left in the office fridge!  It expired today so I gladly ate it up!

Gotta enjoy the non-vegan foods before the Vegan for a Week challenge starts on Monday!  I’ve started drafting my meal plan for the week but I’ve got a long ways to go!

Ohh what a cool challenge! I do love cheese and eggs so much though, so that would be hard for me.

My quinoa burger recipe has been one of my favorites lately. You can do a flax egg instead of a regular egg to hold the mix together.
