Last night, we had a big hail/sleet/rain storm.  I loved every minute of it.  Going to sleep with thunder and lightening?  I sleep like a baby.  I was not loving it so much this morning when there was a layer of ice to scrape off my car.  But, this is way better than snow, hands down!

Having never actually made a breakfast cookie, but hearing nothing but good things, I was inspired to give it a shot.   I used ≈1/3 cup rolled oats, 1 tbsp mocha peanut butter, 1 tbsp chia seeds, and 1/2 scoop protein powder.  I started with 1/4 cup almond milk, but things weren’t mixing very well, so I added another 1/4.  It ultimately ended up being a bit too much.  I used cinnamon chips as a mix-in and threw a couple pecans on top for good measure.

Beyond that, though, this was an awesome breakfast!  It was delish and kept me full all morning!  I’m definitely making this again.

I should say it kept me full until I started having the “wow, that breakfast cookie really kept me full all morning” thoughts…then, I was almost instantly hungry.

In continued attempts to eat up the food I’ve got around the house  before I leave for Washington DC, I brought everything I would need to make nachos to work.  That is…except for a crucial ingredient:  tortilla chips!  I had a bag at my desk, but when I realized they expired almost two months ago, they immediately found their way to the trash.

I contemplated ordering something for delivery, but I didn’t want to spend the money.  So, I made chip-less black bean nachos instead.

Rather than a tortilla chip base, I used more black beans and added some Mexican blend shredded cheese.  I warmed that up, and topped it with guac and salsa.  I missed the crunch of the chips, but this definitely worked well in a pinch!

Haha I don’t know if that counts as nachos when there are no chips or tortillas!! Can’t wait for the Saturday meet up!
