I didn’t put my camera in my purse last night, but I remembered as I was almost asleep and didn’t want to get out of bed.  I convinced myself that I’d remember to do it in the morning.  I was wrong.   Instead, I bring you the beauty of iPhone photography!  Prepare to be amazed….  😉

I was really excited that I used up a jar of peanut butter last week; that only means one thing:  overnight oats in a jar!  It was a small jar (only about half the size of a “normal” jar of peanut butter), so it was full to the rim!

I could not, for the life of me, get the camera to focus!  Like I said, be amazed at those mad photography skills.

Lousy picture aside, these were the best overnight oats I’ve had in awhile!  The were SO good, I was sad to reach the last bite.

I finally got an invitation to Google+ today!  I’ve been dying to get into the latest social network venture.  I am anxious to play around with the site and really build up my profile.  I’ve done a bit already, but not too much.  First impressions:  it feels a bit overwhelming, perhaps a bit too complicated to use at first glace; but, I think that will quickly be overcome as I familiarize myself with the site.  I can definitely see where they’ve pulled from Facebook in terms of design.  I don’t think it has the potential, at least not in the foreseeable future, to become the dominate social networking site; Facebook has that in the bag.  Overall, not too bad!  I’m having fun exploring and getting it all set up!  I am curious to see where they take this platform in coming months.

Last night, I made a batch of Snobby Joes to eat throughout the week.  I used cannellini beans instead of lentils because there were lentils nowhere to be found when I went grocery shopping.  I also used a whole can (3.5 cups) instead of the listed one cup.  I used a little extra tomato paste to compensate for the extra beans.

They’re definitely not sloppy joes, but they’re a good substitute.  I like that I can get a similar result but without having to use faux meat products like Morningstar.  Those are great in a pinch, but real food trumps processed, artificial stuff every time.

I love Snobby Joes! I made a variation on that recipe and Mama Peas and got something pretty yummy. 🙂 I froze half the batch, too, so if you get sick of ’em, know you can freeze ’em for another go-’round later.

Oh, good to know! I was actually thinking about that at work this afternoon; I’ll definitely have to do that!
