food processors do not make smoothies.

I went to the gym for the first time in over two weeks last night!  I kept it really light and easy, not knowing how my knee would hold up, but I did 1.5 miles on the treadmill and 1 mile on the elliptical.  I was definitely feeling it by the time I finished (and still a bit today), but it felt so awesome to get back!  My goal this week is to keep my knee feeling happy while still getting the miles in.

After getting home, tragedy occurred in my kitchen last night:  I broke my blender in the midst of making a smoothie!  Fortunately, my roommate Sara has one as well, so I have something to use in the interim.

Before Sara got home and reminded me she also had a blender, I tried using my food processor in an act of desperation.  I didn’t think it would really work, but I really, really wanted my smoothie so I tried it.  I was right.  Epic fail.

Eventually, I finally had a drinkable smoothie and let me tell you, it was a good one!  I used 1 cup almond milk, 2 cups spinach, a banana, 1(ish) cup tropical fruit, a scoop of vanilla protein powder, 1 teaspoon xantham gum.  All topped off with 1/4 cup Bear Naked granola!

I’ve never used the xantham gum before, but Julie does all the time and says it make it so much thicker.  She was absolutely right!  Between that and finally using frozen bananas, it was awesomesauce.

It was so filling, but so very good!

I’ve been really loving this whole four-day week thing.  Having it be only my second day in the office, but knowing it’s already Wednesday is fantastic!

I had my first (very minor) cheat moment of the Vegan Month Challenge this morning.  The cinnamon chips I bought not too long ago list non-fat milk as the second ingredient.  My primary goal is to eliminate all the very obvious sources of eggs and dairy, so I don’t feel too terrible about this one.


I am loving the Great Harvest High 5 Fiber bread that I picked up at the Farmer’s Market last week – super tasty!  There’s a GH store not too far from my house, I really need to start going there for my bread.  It’s a little pricey, but so well worth the price!

So, big shocker here:  I forgot my lunch at home, yet again!  Fortunately, I had an Amy’s Kitchen meal stocked away in the freezer.  Well, I’m 99.9% certain it was mine.  I still ate it.  Shh, don’t tell!  It was the Tamale Verde – super tasty, although a little doughy.  One of my co-workers shared half her avocado with me which made it even better!  I heart avocado!

I’m super excited to try Bartertown, the latest vegetarian/vegan restaurant in Grand Rapids tonight!  I’ve been anxiously awaiting for them to open and they finally did not too long ago!
