After close to a week of being sick and feeling all around miserable, I am finally starting to feel human again! Yeah! I had (well, still have a little) nasty head cold that knocked me out. I was completely drained. I took a sick day from work on Thursday and ended up sleeping almost the entire day. I still don’t feel 100%, but so much better!
I even felt like eating real food today! Not only eating, but even cooking! I don’t know if it’s because I ate a lot of cereal and PB&J this week, but dinner tasted fantastic tonight.
I made some Buitoni three cheese tortellini and mixed it with a can of Del Monte diced tomatoes with basil, garlic and oregano. Yum!
Since I have a lot of produce I neglected this week, I wanted to use some of that up as well. While the pasta was cooking, I whipped out the George Foreman grill (how great is that for apartment living?!) and in an aluminum foil pack, grilled some asparagus and red pepper drizzled with olive oil, fresh lemon juice, a little sage, and some pepper.
It was so delicious!! And, what’s some good Italian without a glass of wine?
As I was eating, I realized how wildly different my eating habits are from a couple years ago. Before, I would have easily had twice as much pasta on my plate (being sure to pick around the tomatoes) and the asparagus definitely would not have been there. I would have had a couple pieces of garlic bread, preferably with cheese melted on top.
While my earlier eating habits were, for sure, delicious, I am glad I’ve grown up a bit. I know I am much healthier and happier now.
My Jillian June challenge definitely got sidetracked this week. I only got through five days of level one. Even with only five days under my belt, I was feeling pretty confident about level one. I think it helps that I’ve started the Shred a couple times. Tomorrow, I am going to attempt level two which I have never, ever done. It’s been almost a week without any considerable exercise, so I’m going to take it one step at a time. I’m anxious to get moving again!
