This is my 500th post!  I feel like it’s such a milestone, so here’s to 500 more!  THANK YOU for reading, if you’ve been here from day one or if this is your first visit!

I had a work dinner last night and the meal was absolutely delicious!  We started out with some vino and a really great (undocumented) gruyere cheese and asparagus puff pastry.

For dinner, I had salad, fresh fruit, and risotto.  The risotto was so amazing I had a second serving!!  I had a couple slices of bread with buttah as well.

Dessert was brownies sprinkled with toffee chips and Lemoncello.  YUM!  Don’t those brownies look absolutely delicious?!  I wanted to dig right in!

By the time I got home, it was getting late – close to 10 pm, but I was really wanting to shoot for close to 8 hours of sleep again!  It was so great the night before, I want to make an effort to get that to be the rule rather than the exception.  It was probably around 11:30 by the time I fell asleep, so 7 hours isn’t so shabby!

Breakfast was a bowl of cereal, so you’re not missing much there.  I had a mid-morning snack of animal crackers with Honey Roasted Cinnamon Peanut Butter.  I love the Naturally Nutty products, they’re all so tasty!

It was enough to tide me over until I headed out for the day.  Yep, I took the afternoon off!  It felt great to leave the office at noon!  I had a couple errands to run before heading home.  I stopped at the library to return a book and pick up one I had on hold…and ended up getting a few more, as well.  I think I’ve got at least a dozen books checked out now.  I’ve got an addiction, I think!  😉

You guys, I had the most delicious fancy pants grilled cheese with some spinach artichoke cream cheese, cherry tomatoes, onion, spinach, and mozzarella cheese.  I am in love with this sandwich!

As I was eating, the roommates and I were talking about how epic a gourmet grilled cheese restaurant would be.  I would eat there all the time!

I had some fruit with the sandwich, too.  I’m getting super excited for the Farmer’s Market to open up in a couple weeks!  It’ll be a bit longer after that before the fruit starts coming in, but it’s getting so close!!

What’s your favorite grilled cheese combination?  Would you frequent a gourmet grilled cheese restaurant?

i would totally eat almost every grilled cheese off a gourmet GC restaurant menu. omitting the meat products of course. The best one I’ve had is at a place called Egg Harbor Cafe in the Chicago burbs and is Cheddar and coJack (I think) on Honey oat bran bread, It has tomatoes and bacon on it, so I just order it w/o the bacon. mmmmm

That sandwich looks delicious! There was a potential Grilled Cheese Restaurant called Melt Works…. I watch America’s Next Great Restaurant. Unfortunately, Melt Works got cut! But the idea was great. I would eat there!

I love hummus ( any kind!), havarti, tomatoes and spinach grilled cheese. I also had a great one at the Electric Cheetah Soup Shop. Not sure what was on it, but it was delicious!

I’ve never tried using hummus – but that sounds delish!!
