Last weekend, it was in the 70s and 80s, the sun was shining, and there was a light breeze.  This weekend, it was in the 30s and 40s, the sun barely peeked through the clouds, and the wind was so strong it was pushing me around.

Welcome to springtime in Michigan, my friends!

I had quite the productive afternoon and evening!  I did my grocery shopping and realized I really need to go more often.  I think it had been close to 3 weeks since the last time I went.  No wonder I wasn’t eating well – produce is not going to last that long between trips!

Once I got home, I cut up some fruit and made a couple things to eat throughout the week.  Dinner ended up being the overnight oats that were supposed to be Saturday’s breakfast, but since I met up with some of the family, they were still needing to be eaten up.  They were extra doughy after sitting for almost 48 hours!

I’d like to call this the double pumpkin overnight oats.

  • 1/3 cup rolled oats
  • 1/3 cup almond milk
  • 1/2 scoop protein powder
  • 1 tbsp chia seeds
  • 1 tbsp ground flaxmeal
  • 1/3 cup canned pumpkin
  • 1 tbsp pumpkin butter

Mix it all together and let it sit in the fridge overnight!

Holy yum.

After this afternoon’s post about how much I need to get back on track I had to do the yoga I had on my training plan.  It was too late to go to any classes, so I broke out Bob Harper’s Yoga for the Warrior
which is an intense hour (for me), but a really good yoga session.  I was really feeling it by the end!

I can’t believe the weekend is over already!  It went so fast, but I had such a wonderful time hanging out with my niece!  Back to work in the morning!

I’ve always wanted to make overnight oats, but always forget! This double pumpkin version sounds fantastic!

Ohh this reminds me I need to make use of the canned pumpkin in my pantry. Now that the weather is warmer in DC (and hopefully sticks!) overnight oats should become a regular rotation in my menu!
