dear spring.

Dear spring,

I love that you (supposedly) bring warm weather, sunshine, flowers, and that summer is just around the corner.  What I don’t so much love is that you bring my allergies out, front and center.  If you could not do that, I wouldn’t complain.

Love,
Mindy

Sometime last evening, the allergies (at least that’s what I’m thinking it is) started setting in and by this morning they were hitting hard.  My eyes were watering so bad that a few people asked if I was okay, because they thought I had been crying!  Between that and the raw, red nose, I was looking awesome today!  I got some Claritin on my way home from work, so hopefully that kicks in soon!

Breakfast was chocolate pumpkin overnight oats with 1/2 cup each of  rolled oats, almond milk, canned pumpkin, and 1 tbsp each of chia seeds, cacao nibs, and cocoa powder.  The pumpkin flavor got a bit overpowered, so I consider using less milk and more pumpkin next time around.

I had some trail mix for a mid-morning snack!

My sister, Kris, texted me this morning and asked if I wanted to meet for lunch, so I took her up on that!  I don’t get to see my sisters (or any of my family, for that matter) nearly enough, so I am always grateful for any opportunity.  I had a meeting to get set up and running; since I couldn’t leave until that was done, it ended up being a bit later of a lunch at like 1:30 pm.

We went to the Omelette Shoppe – breakfast food sounded so good!  I had a California veggie omelet with avocado, mushroom, tomato, green olives, and Monterrey Jack cheese; a side of redskin potatoes and English muffin toast rounded out the meal.

I was super full after eating it all!  I probably could have gone without the potatoes, but they really hit the spot!

Since I took a longer lunch break today – an hour, when I usually only take half an hour – I stayed at work a bit later to make up the time.  I stopped at the drugstore on my way home, so by the time I got there, it was just about enough time to turn around and leave for church!  So much for that run I was planning on…

Between being short on time and still full from lunch, I had just a light and easy dinner of cereal.  I broke out the random box of Frosted Flakes I had in the cupboard (that may have had an expiration date of August 2010…oops.  They tasted fine, that’s what counts, right?!) and had a couple servings of that.  Apparently it was a breakfast foods kind of day!

Frosted Flakes were, hands down, my favorite cereal as a kid.  I think it was rare when there wasn’t a box in the house!  As Tony the Tiger always says, they’re grrrrreat!  😉

Anthem was good tonight, but I’ll be honest and say that I’m kind of okay with the fact there’s only a couple weeks left before we’re off for the summer.  I love being a part of the youth group and mentoring some great girls, but it’s that point in the year where I’m just feeling a bit burnt out.  It really hit me that I’m feeling that way when we were off for spring break a couple weeks ago.  I’m excited to have Wednesday nights to myself for a couple of months.  That being said though, I’ll miss my girls a lot!
