I need to have days where I don’t want to run but force myself to go anyways because those seem to be the days where I do my best! I really wanted to go home and relax for a bit after work but I knew I would never leave the house later in the evening if I did that. I just kept telling myself the sooner I finish running, the sooner I can go home. I did 3 miles in 31:28 (10:29 pace), which was well over a minute faster than the same distance just two days before!
Before I left the office, I had a couple snacks throughout the afternoon. I could not get enough to eat today! I started with half this peanut and pecan mix.
Awhile later, I broke out some fruit (which makes me anxious for spring!).
This morning, I saw some asparagus in the fridge that I knew I wanted to make for dinner tonight and I thought it was perfect timing that Evan posted a recipe for Lemon-Garlic Asparagus this morning! I didn’t have a lemon lying around, so I used Garlic Gold Meyer Lemon Vinaigrette where he calls for olive oil. I also added a bit of pepper.
I was needed some carbs, so I cooked up a serving of pasta to go with it. I added a little Earth Balance on top.
In other super exciting (at least to me!) news, I was thrilled when I left the gym at 6 pm tonight and it was still light outside! The daylight hours are getting longer my friends! Just another small sign spring is on its way! It makes me so happy!
