I cheated at the Vegan for a Week challenge today.  Someone brought in a carrot cake with thick, delicious cream cheese frosting for my department.  I tried to resist, I really did.  But, I was weak.  I blame the frosting, it just called my name!

As challenging as it is, and even though I ultimately couldn’t resist cake, I’m (thus far) glad I joined in this challenge.  It’s a very eye opening experience.  I’m ready to tackle four more days to finish out this week!

A few weeks back I made an impulsive decision and bought tempeh at the grocery store.  I’ve had it once at a restaurant, but beyond that I didn’t have a clue what to do with it.  After a little searching (oh, how I love Google!), I had a few ideas.

I was skeptical.  The stuff looks weird!  I bought it and I try not to let food go to waste, so I got cooking!  I broke it up into 1/2 inch cubes and sauteed it with a bit of olive oil, then added some soy sauce, and about 1/4 cup of water.  I let it cook for 5 minutes or so, stirring occasionally while I chopped some summer squash and zucchini to add to the mix.  I added a bit more water and let it all cook until the veg browned.

I liked the tempeh a lot more than I thought I would, to be completely honest.  I don’t know that it’s something I’ll run out and buy every week, but I’ll buy it again.  I want to find some great recipes that incorporate it.  Cooking it with the veg was good, but it wasn’t a rock star, stand out kind of meal.  I need something that leans a little more towards epic.

I headed to church for youth group.  February is relationship month and my girls had some big, tough questions.  I don’t know that my answers were the best or “right”, but I tried my best to be honest and give the best insight I could.  Easier said than done.

Don’t feel bad about the cake. I have a few friends who are vegan and we’ve talked about it in the past, it seems to have been more of a gradual switch for them as well. They said its easy to stop eating obvious animal products like meat and cheese but harder in things like baked goods and prepared foods. I’m impressed by everyone doing this challenge, I don’t know if I could handle it.

I cook tempeh up in little flat strips with soy sauce or Bragg and use it as “bacon” on a BLT. Extra delicious if you add avocado! Gaia has DELICIOUS cuban grilled tempeh also.

I actually have a package of tempeh at home right now that I’m trying to figure out what to do with. My idea is to make tempeh tacos… I’ll let you know how they turn out!

Oh that sounds good! I was thinking of trying to make taco “meat” with tofu the other day, but this would be so much better!

I love tempeh…..it has a much meatier texture than tofu. I like marinating it and then having it in stir fries or sandwiches.
And I wouldn’t have turned down the cake either 😉
