cinco de mayo bowl.

Did you know apples and strawberries go together really well?  I threw them together today and was pleasantly surprised with this great afternoon snack!

After sitting around in my workout clothes for a solid half hour, I finally motivated myself to get out the door!  It ended up being a bit slower than I was hoping, but getting out for a slow one is better than not getting out at all!

  • Mile 1:  10:40
  • Mile 2:  10:54
  • Mile 3:  11:20
  • Mile 0.6:  7:07

I did 3.6 miles in 40:02 (11:07 pace).  My legs were just not having it, throw in some headwind, and it was a tough one.

I also redid Week 1, Day 3 of the 100 Push Up Challenge.  I decided rather than just not doing all of them in the true pushup fashion, I’m going to go through the whole thing doing as many “real” pushups as I can in a day and finish out with “girl” pushups.  Today I did 20 in full form and 27 “girl” form.

Since I wasn’t going out to celebrate Cinco de Mayo, I figured I should at least have a little south of the border in my dinner!  I made a Cinco de Mayo bowl with brown rice, refried beans, diced tomatoes, avocado, and a Mexican blend cheese.

The avocado was definitely the highlight!  But, then again, I’m pretty obsessed with avocado (and guacamole!!) anyhow.

And, some random corn on the cob on the side.

My timing was so off when I was cooking tonight!  The corn was finished before the beans which were finished before the rice.  It still all came together really well!
