What do you do when you’ve got a bunch of brown bananas?  Make banana bread, of course!

What do you do when you realize your loaf pan still has food in it?  Make banana bread muffins!

Makes 12

  • 4 ripe bananas
  • 3/4 cup whole wheat flour
  • 3/4 cup all purpose flour
  • 1/3 cup Earth Balance, melted
  • 3/4 cup cane sugar
  • 1 chia egg
  • 1/2 tbsp vanilla extract
  • 1/2 cup cinnamon chips (optional)*


  • Pre-heat oven to 350 degrees and grease the muffin tin.
  • Make your chia egg:  mix together 1 tablespoon chia seeds with 3 tablespoons cold water; set aside.
  • Peel the bananas and cut them into large chunks; in a large bowl mash the banana, then add in flour and stir together.

  • In a separate bowl, melt the Earth Balance (be careful it doesn’t start to boil; I microwaved it for 1 minute at 50% power).  Add in the sugar, chia egg, and vanilla; lightly mix.

  • Add the wet ingredients to the banana/flour mixture and stir until well combined.
  • Mix in the cinnamon chips.
  • Fill each cup in the muffin tin about 3/4 of the way to the top.

  • Bake at 350 for 35-40 minutes (until a toothpick comes out clean).  Let cool in the muffin tin for about 5 minutes, then transfer to a wire rack until cooled.

{But, be sure to eat one while it’s still warm from the oven; add a bit of Earth Balance to make it that much tastier!}

*Note:  some cinnamon chips have nonfat milk; if you want these to be vegan, check for that or omit this ingredient.  They’re still tasty without the chips.

Okay, what in the heck is Earth Balance and Chia Eggs???

Earth Balance = vegan margarine
Chia eggs = mix 1 tbsp chia seeds with 3 tbsp water and let set for approximately 15 minutes. This is the equivalent of one egg.

They’re in the baking aisle, in the same area as you would find chocolate chips! They’re so good!
