I thought a single serving apple crisp type of breakfast would be delicious this morning.  It was great in theory, but the execution didn’t go nearly as well.  I didn’t have the right size dish for a single serving, so I ended up putting it in half a cake pan.  I didn’t make enough of the topping and I didn’t bake it long enough, so it was more warmed up apples with a few chunks of the crisp tossed in.  Not quite the effect I was going for; better luck next time!

Breakfast definitely was not enough to fill me up until lunch.  I broke out a lemon Larabar mid-morning.  I want to try to make something similar at home, since they can be a bit pricey.  Although, I was excited to come across this coupon today!

And then had this little bundle of joy to entertain me for awhile.  Isn’t she so cute?  I love those bright blue eyes!  Playing with a 10 month old kiddo is a welcomed distraction from my actual work any day of the week!

Since I’m moving in a couple weeks, I need to start working on paring down my food.  I’m only moving 3 miles from where I’m at now, but the less I have to move that short distance, the better!!  So I grabbed a frozen Amy’s enchilada meal out of the freezer for lunch.  This was, hands down, one of my favorite Amy’s meals that I’ve had!  It was great (plus, it was perfect for vegan week!).

i actually haven’t had a frozen meal since… I don’t even recall! That one looks delicious, though. I’m always tempted to buy Amy’s, especially when they are on sale!
