an apple kind of day.

We’re officially past the halfway mark!  I don’t know about you, but this week has felt exceedingly long to me.  I think I’m already in the long weekend mentality for next weekend!

Breakfast was another bagel/cream cheese combo this morning.  I was in a hurry this morning (getting out of bed is getting a little rougher every day!), so I didn’t snap a picture.  But, if you’re really dying to see one, just look at yesterday. 😉

A couple nights ago, I threw together a gigantic pot of chili based off my ranch chili recipe.  I also added a can of kidney beans and a can of black beans, along with some red pepper, mushrooms, and more onion.  I also used 1 cup of water instead of the milk.

I love the bulk the extra beans and veggies added.  I think there are a lot of different options for veggies that could be added in and still have this taste amazing!

Have you guys seen these new Dole Fruit Crisps?  They’re really cute single sized servings of apple crisp (there’s two other flavors besides apple cinnamon).  All you have to do is microwave the fruit cup for 30 seconds, then sprinkle on the topping.  Easy peasy lemon squeezy.

It was an impulse buy when I was shopping the other night.

It’s definitely not the same as a homemade apple crisp by any means, but it was pretty tasty.  I would have liked to see a little less syrup in the fruit cup, but beyond that, it’s a great snack to keep in my desk at work!

I’ve been doing more tweaking for my training plan for my two big races next year.  I am so determined to kick ass and finish strong!  I want to try and incorporate some additional classes, like Pilates to vary up my cross/strength training even further.  I’ve still got some work to do, but it’s coming along!

You know, I really don’t like oatmeal all that much, but lately I’ve been trying it.  I keep hoping that if I find some magical combination, I’ll fall in love with it.  Maybe I need Kath to prepare it for me – she seems to have it down pat!

Tonight’s mix contained a spoonful of peanut butter, some cinnamon and pumpkin pie spice, and a “baked” (aka microwaved) apple topped with cinnamon and agave.

Eh.  Still not my favorite thing in the world, but that’s completely okay.  I feel like the antithesis of a healthy living blogger for not liking oatmeal, but so be it!  🙂  Apparently it was an apple kind of day though!

Gotta go clean up the kitchen and head to Anthem!

See, my problem is I love oatmeal but it does a horrible job at keeping me full. And yes, I do all the smart toppings to add protein & fiber to it. Good thing I have figured out the stuff that does :).
