adventures with tofu.

Tofu is one of those foods that always kind of freaked me out…cooking with it, eating it…I just wasn’t sure about the whole thing.

But, I was feeling adventurous today, so I gave it a shot and tried Tofu Veggie Terriyaki. I cut up a package of extra firm tofu into 1/2″ cubes and heated that with a little EVOO for about 10 minutes. Then, I dumped in a bag of frozen stir-fry veggies, mixed it together, and let it sit (covered) for about 10 more minutes. Finally, I added 6ish tablespoons of terriyaki sauce, mixed it all together and let it simmer for a few more minutes. (This made about four servings.)

And, my verdict on tofu?

I love, love, love it! So delish! I will definitely be cooking with it again!

In other good news, I got back into working out today! I didn’t actually do the Shred…I was really just wanting to zone out, so I went to the Y and hopped on the elliptical. I did 3.4 miles in 40 minutes.

I was listening to an old podcast from my church which I was exercising and at one point I literally laughed out loud at one of my pastor’s jokes. He’s a funny man, that Rob. Still, made for a slightly awkward moment.

Ah, such is life.

I’m glad you enjoyed your tofu creation! I cannot cook it. I do enjoy it from restaurants though!

I experimented with tofu the other week. It was fun, but for some reason I got burnt out on it very quickly. It’s like me and lobster. I can’t eat it that often. I like it, but I don’t crave it every day like I do peanut butter, chickpeas, bananas, oatmeal, etc. Glad you had a good workout!

Glad you liked tofu – that recipe sounds deelish. And good for you getting back into your workout routine – sounds like your week if off to a great start. 🙂

It was great – if I make it again, I might add some garlic or something like that and a little more sauce.
