Missed the weekend? I went to a beautiful wedding, saw the touring production of the musical “9 to 5” starring Diana DeGarmo, went on a carb overload, and had a couple firsts (including my first giveaway…check the post for details!). Overall, a good weekend! Now, there’s only four days of work left before a nice, long eleven day break! I am really excited!!
As I was getting ready for bed last night, I came into my room and had the most adorable visitor curled up.
Cute, no? Not so cute when I had to try to make her move so I could get into bed. That didn’t work so well.
I threw together some overnight oats last night. Perfect way to start a Monday morning. The oat mix contained 1/3 cup each rolled oats, vanilla Chobani, and almond milk, plus about a tablespoon of cinnamon vanilla almond butter and another of chia seeds.
Almost as good as overnight oats in a jar. Just not quite the same.
It ended up being a late breakfast this lovely morning. I brought it to work with me and by the time I got caught up with a project that had to be wrapped up this morning, it was 9:30! A late breakfast = a late lunch. It was then after 1:30 by the time I realized I should probably eat. Okay, the Christmas cookie (or two) I had later in the morning may have helped fill me up in the meantime.
But, seriously. It’s late and I’m just now finishing eating. It was a quick pack and go kind of lunch. I had some leftover buffalo tofu with blue cheese, and some carrots and hummus on the side.
And, every so often, I
need want a Diet Coke. I know it’s terrible for me, but sometimes a girl’s gotta do what a girl’s gotta do, you know?
