I was pretty glued to CNN and the New York Times today, following the news from Japan’s earthquake and tsunami.  The pictures and the videos are just heartbreaking.  I know I’ve said it multiple times already, but my thoughts and prayers and love go out to everyone affected by this disaster.

And with that, how about we talk about something a bit more lighthearted?  Food!

I broke out the blender for a strawberry smoothie this morning with strawberry Chobani, frozen strawberries, almond milk, peanut butter, and flax.  It was ridiculously good.  The peanut butter was the winning touch.  It was super filling and easily kept me going until lunchtime.

I got invited to a potluck this afternoon and was told I should just show up.  No need to bring anything.  Don’t get me wrong, I love cooking and baking, but I wasn’t going to complain about just having to eat.  Not a bad deal!

I had a little bit of a lot of things.  I had to subtly spit the pasta salad that had the broccoli into my napkin because as I took my first bite, I saw the little bitty bits of bacon.  Herein lies the difficulty of potlucks for a vegetarian.  Once I got past that close call, I greatly enjoyed my meal.  I had to laugh though:  two people had pizza delivered and someone else picked up KFC.  But, they brought something, so I suppose that still puts them a step ahead of me, no?

The afternoon went by really fast!  For a Friday afternoon, I was quite productive!  Unfortunately it was with some of those “I don’t want to do this so I’ll keep pushing it off until the last possible minute” kind of tasks that kept me busy, but it felt good to get some of that out of the way – and before the last minute, even!  The fire alarms went off at one point, so the 20 minute evacuation was a good time waster, too!

Tonight was another round of the Grand Rapids Dinner Club.  We ended up at the Beltline Bar, a Meixcan restaurant we’ve all been to, which kind of defeats part of the purpose of the GRDC since it’s partly to try new places.  But, it’s also, and more importantly, about spending time with friends and that was a success!

I do love the Beltline Bar, so I really quite okay with it.  Beth arrived well before any of us, so there was an order of guacamole ready and waiting when I sat down.  I gladly dug in when she offered!

And, quickly ordered a margarita when our waitress came.  Beth had also ordered a pitcher of sangria for the table, but that’s not high on my list of favorite drinks.  A margarita, on the other hand?  Yes, please!

Even though I wasn’t super hungry by the time my veggie wet burrito arrived, I still managed to devour it…practically licked my plate clean.  Okay, that’s an exaggeration, but there definitely wasn’t a doggy bag to bring home.  It was SO big; I definitely should not have eaten the whole thing.  It was practically the size of my head.  Maybe bigger.

There should have been.  It all hit my stomach like a rock.  It was so good though!!

Tonight’s agenda?  Throwing in a movie and going to bed early!  Once again, I stayed up WAY too late last night to finish reading The Hunger Games, but it was so worth it!  I finished the first book and I’m on a waiting list at the library for the second one.  I’m really tempted to go buy it because I don’t want to wait.  Patience is not my strong suit.

I really like the Beltline bar. Good margaritas! we got chips and queso when I went and I wasn’t a fan, but that guac looks good!
