Happy Friday EVE, dearies! How has your day been? I don’t know about y’all, but I’m ready for the weekend!
I had a fabulous night at youth group last night. The girls in my LifeGroup, what we call small groups because we’re journeying through life together, are just great. They were asking some really big questions…you know, the “does God make bad things like floods and hurricanes happen?” kind of stuff. I’m impressed they’re only high school freshman and already thinking about those kinds of questions.
I started my day out with, what else, a pumpkin-y breakfast! Today was a pumpkin pie smoothie with canned pumpkin, plain Chobani, a banana, and pumpkin pie spice. I was attempting for a layered look, a parfait if you will. It didn’t work so well, but still tasted great!
I got a bit creative for lunch. I brought stuff to make a peanut butter and honey sandwich along with an apple, but I wasn’t in the mood to just eat the apple on its own. So, I put it all together! It was ridiculously good and I was quite proud of thinking for a new sammie combo. Yes, I realize that I’m certainly not the first person to actually put it all together, but it’s one for a change that wasn’t inspired from another blog.
I will eat this again, most definitely.
And, what day is complete without some chocolate? I broke out a pack of Swiss Cake Rolls. They’re so good, but I eat them too fast!
I saw some more ArtPrize entries tonight while I was waiting to get my hair done. This was my favorite at the venue I was at. Isn’t it fun?!
Tonight was the first time in almost four months I’ve gotten my hair trimmed up. I am horrible at scheduling appointments and always wait until the layers are too grown out it just doesn’t look great anymore.
Once I finally made it home, I made a dinner I’ve been craving all week: roasted cauliflower and garlic.
Cauliflower is actually one of my least favorite vegetables, but I found a way to make it that I could eat a whole head in one sitting. Drizzle it with some extra virgin olive oil, then sprinkle on cumin, salt, and pepper. I roasted it at 400 for 35 minutes.
While it was in the oven, I had my dessert before dinner. But, really, can you call it dessert when it’s got probiotics? I fully believe I was just adding some nutrition to my day!
I’m off to make more headway in The China Study. It’s beyond overdue, so I need to get it finished! Tomorrow is my LAST day of boot camp! I can’t wait to share my results with you! Stay tuned for before and after of measurements and fitness testing!
